Uncover centuries of culinary heritage simmered in copper cauldrons, roasted over beechwood embers, and baked in stone ovens across European market squares.
Beverage Heritage
Dark red wine heated gently with Ceylon cinnamon quills, cloves, star anise, cardamom, and citrus peel. In Feuerzangenbowle, a rum-soaked sugarloaf is ignited above the cauldron.
Baking Masterpiece
Protected by EU Geographical Indication, authentic Elisen contains a minimum of 25% almonds, hazelnuts, or walnuts, with less than 10% wheat flour, baked on edible wafer paper.
Savory Alpine Specialty
Half-wheels of raw cow's milk Raclette cheese placed under radiant heaters until bubbly and golden, then scraped onto steamed potatoes, cornichons, and crusty baguettes.
To recreate the authentic warmth of an Alpine market at home, follow our sommelier-approved proportions. Never allow the wine to boil, as alcohol evaporates above 78.3°C and heat damages subtle aromatics.
1 bottle (750ml) medium-bodied dry red wine (Dornfelder or Blaufränkisch).
2 Ceylon cinnamon sticks, 4 whole cloves, 2 star anise pods, 3 cracked cardamom pods.
Peel & juice of 1 organic orange, 2 tbsp raw forest honey or cane sugar.
Steep on low heat (65°C - 70°C) for 30 minutes. Strain before serving warm.
